This salad is insanely fresh and vibrant using all my seasonal summer favorites. Pair with light fish or a lovely steak to get those veggies in your day.
3 cups arugula
1 fresh corn on the cob, cut fresh off the cob
1/2 small avocado, cubed
1 tbsp raisins
1 tbsp queso fresco
1 tbsp pepitas
1 small tomato, chopped (we used a yellow one)
Arrange all ingredients above on a salad plate. Blend ingredients below in a blender or Magic Bullet until smooth.
Juice of 1 lime
2 tbsp basil, chopped
3 tbsp olive oil
Dash of salt and pepper
Drizzle 1-2 tbsp dressing on salad and top with fresh cracked pepper.
