1 head of cauliflower
1 tbsp olive oil
Salt/pepper to taste
2 tbsp olive oil mayonnaise
1 tbsp Srirracha or other chile sauce
Juice of 1 lemon
Preheat oven to 400 degrees. Remove all bottom leaves from cauliflower and cut into 1/2" to 3/4" pieces to resemble a tree. Place onto greased cookie sheet, season with salt and pepper, and drizzle with remaining olive oil to lightly coat. Roast cauliflower until tender and slightly caramalized- about 25 minutes. While cauliflower bakes, prepare sauce. Whisk together olive oil mayo, lemon juice, and srirracha and set aside. Serve while hot! If watching your caloric intake, use sauce sparingly.
