No cooking skills needed for this salad- just microwave and toss together! Having easy go-to ingredients like Central Market "cheat" microwaveable grain blends make healthy eating effortless.
1 packet Central Market Microwaveable Grains Lentil/Barley Blend
1 apple, cubed
1/4 cup walnuts
1 tbsp chopped fresh parsley
1.5 tbsp olive oil
2 tsp apple cider vinegar
1 tsp dijon mustard
Salt and pepper to taste
Microwave grains according to package direction. Let cool and place in a bowl. Add all the following ingredients and toss to combine. Pair with grilled chicken or have over greens for a light lunch! Serving size is 1 cup.
Protein bars are great convenience for those on the go, but a lot of brands at the store these days are JUNK. Be your own detective and watch for sugar overload in every form... sucrose, brown rice syrup, and high fructose corn syrup to name a few. Yuck! To avoid this all together, consider making your own at home! Keep one of these bars in your bag for a hunger crash emergency or pre/post workout snack.
1 cup medjol dates (about 10-12)
1 cup cashews
3 tbsp 100% whey protein powder
1/2 tsp cinnamon
1/2 tsp vanilla extract
Place dates and cashews in a food processor. Process until a crumbly consistency. Add cinnamon, whey protein powder, and vanilla extract and pulse until combine. Line a bread/loaf pan with plastic wrap. Press mixture tightly into pan. Cover and place in the freezer for 15 minutes or until firm for cutting. Cut into 6 bars or 12 for smaller bites.

It's time for the hustle and bustle of back to school, but healthy eating should not be ignored. For those of you who were asking, this is the recipe I had the honor of presenting last week on SA Live! These whole wheat pitas are a cinch to throw together for your kiddos. Make it fun with our Greek yogurt ranch dip and pack with other goodies such as raisins, apple sauce, clementines, or cherry tomatoes!
1 whole wheat pita, cut into quarters
1/2 cup sliced cucumber
1/2 cup matchstick carrots
2-3 oz turkey breast
3/4 cup nonfat plain Greek yogurt
1 tsp ranch seasoning (we used Simply Organic)
Arrange pitas with 1 slice turkey breast, 1 tbsp matchstick carrots, and 3-4 cucumber slices. To prepare ranch dip, mix together yogurt and seasoning. To pack lunch, arrange 2 pita quarters and 1/4 cup ranch dip in an airtight container. This recipe can easily be enjoyed as an adult too!
